    Minestrone is my FAAAAAAAAAAAAVORITE soup. i have never had this homemade, and have never been brave enough to try to make it. Potato my 2nd favorite and i make that one all the time:)

    Looks fabulous. What's in it? I recognize the bean and noodle, tomato, onion and kale? Is there cabbage too?

    I used this recipe, with some significant alterations: www.epicurious.com/recipes/food/views/MINESTRONE-11569

    VERY good. I used canned beans, kidney instead of great northern, and didn't puree them. I also added a bit of elbow pasta and quite a bit more stock as the pasta drinks it up. My favorite addition was an old rind of Parmesan that I had around. I tossed it in at the simmer stage and OH MY GOD it made a difference.

    I keep eating a lot of fruits and veggies that I love in the hopes that Peanut will grow up loving them, too.
