soupe au (de?) pois...with foie gras.


even with all the foie gras dishes I'd had earlier in the week at Au Pied de Cochon, this one still made better use of the ingredient than any of them had. Strong pea flavour, not too thick or thin, and enriched with foie gras. Very polished for such a rustic dish. In hindsight probably the best course of the meal.
