salade d'oreilles -- salad with ham, walnuts, and oreilles de crisse -- crispy deep-fried pork rind.

 

not bad and a welcome break to all the starch and protein (if a salad of ham and pork rinds can be so considered), but really the star of this dish was the oreilles de crisse, and from that perspective, there weren't enough of them. The salad contained just a bit too much parsley for me, but was dressed with just the right amount of mustard, perking up the dish, adding interest without drowning the other flavours out.
