A step too far on my french culinary experience - too gamey, coarse and very obvious what the sausage contained - from Wikipedia: Andouillette (French pronunciation: [ɑ̃dujɛt]) is a coarse-grained smoked tripe sausage made with pork (or occasionally, veal), chitterlings, pepper, wine, onions, and seasonings.
