Steep 4 lamp chops with 1 medium onion, cut into wedges, 2 bay leaves, few sprigs thyme, 2 sticks sliced celery, 2 sliced carrots, 3 squashed cloves of garlic, 5 perppercorns and 1 large dired chilli in a bottle of red wine with 1 sliced orange including 6cm or so of peel shaved from the orange. Steep in the fridge for a few hours.
