All the stuff that's supposed to be good for me - pumpkin (containing alpha-beta carotene), broccoli (containing sulphoraphane), spinach (good source of iron and other antioxidants), egg-tofu (source of protein), a dressing made from lime juice and lime zest (containing phytonutrients and flavonoids), fish sauce, mirin, soy sauce, and finish off with toasted sesame seeds!

 

A very healthy alternative for lunch or dinner. I'm beginning to feel like a cow! Moo-moo-moo!
