Liver In The Pan
My chief interest in offals is to ingest liver to assist with my blood sugars. That is what I learned at the talk on diabetes at the Weston Price conference—liver twice a week. Also a terrific source of Vitamin A, B-12, C and D. Also Folate.
We learned how to make liver pate which was the most difficult dish we were shown since it involved assembly of items that needed to be sauted or boiled first and then cooled to room temperature before mixing in the blender. Ingredients included onions, mushrooms and boiled chopped eggs and cumin, salt and pepper.
