Enchiladas Suizas
Looking for a use for leftover chicken, I googled "chicken rick bayless" and came up with this enchilada recipe. I use monterey jack cheese (the recipe didn't specify, queso oaxaca might have worked too), and shallots in lieu of onions on top. Cooked on the plate in the oven.
Next time, I think I'll sprinkle a little queso añejo on top too.
