Shrimp & grits

A delightful dinner...finally found a good recipe for great creamy dinner grits:

 

4 cups chicken or veg broth

1 cup of milk

1 rounded tablespoon of herbs d'provence or Italian seasoning.

Salt and pepper to taste

1 teaspoon of olive oil

1 8 oz pkg of shredded mexican blend or other mix of white and cheddar cheese

1 cup of grits

 

Combine all ingredients except grits and cheese in large pot and bring to a boil. Add grits and cheese, bring back to a boil, reduce heat and simmer until desired thickness...about 8-10 minutes.

 

Ladle on to plate and add shrimp ( we used 16-20 count, sauteed in butter and lemon pepper).

Bon appetite :)

 

Although grits are mostly available, sometimes they may be just a regional item. They're usually in the hot cereal aisle...as most of you know.
