      See those streaks? It means the chocolate isn’t tempered properly. It is crisp, with a nice snap though, so I don’t think I’m far off. My dipping skills aren’t great either - some of them are definitely a bit scrappy.

      Is moisture creeping in? With that pattern of streaks, my brain somehow thinks moisture bloom, though I'm far from an expert, so take that with a huge grain (or row of grains? ;) ) of salt.

      David Lindes No, it's not moisture. From what I've read, it's either insufficient agitation, or poor temperature control. I think it might be agitation. I need to experiment.

      Hmm, ok. Well, I bet the "failed" experiments still yield yummy results, so experiment on! :)
