zucchini fritters


Grate a zucchini or two, and squeeze out the water using a dishcloth or paper towel. Combine with chopped garlic, chives, a few heaping spoonfuls of ricotta, lemon juice, two eggs, and a good pinch of salt. Mix, and incorporate a few tablespoons flour, until it's a gloppy consistency. Then plop spoonfuls into hot cooking oil, and press to flatten. Flip when brown, keep warm in a 300 degree oven.


serve with lemon.
