spring panzenella

based loosely off of this recipe: smittenkitchen.com/2008/04/spring-panzanella/

 

cube old bread, shake together with garlic, olive oil, parmesan, salt and pepper. bake at 400 degrees 10-15 minutes. stir around once in the middle.

 

while it cooks, cook string beans a couple of minutes in salted water. drain and add to chopped tomatoes, mozzerella, and white beans.

 

dress with oil, vinegar, mustard, and lemon juice. I didn't have a red onion on hand to chop for the dressing, but I bet it would be good.
