Carrots Are The Answer

212/365 After pickling four pints of beets this morning, I had leftover brine. I figured it shouldn't go to waste, so started rummaging through my fridge to see what I had that would work well with the cider vinegar-ginger brine that I had used for beets. Carrots and ginger seemed reasonable, so we'll see how they turn out!
