Potato Latkes

One of the traditional side dishes served during Chanukah. Usually fried in oil.

Although lately I've started to bake mine and this year before I could take a photo they were on the plate being eaten. So I'm using this photo instead.

 

For each pound of shredded or grated potatoes add 1 egg or egg substitute.

Shred or grate 1/2 onion depending on your preference.

salt, pepper

about 1/4 cup of matzo meal or 1/4 cup of flour

about 1/4 teaspoon of baking powder and nonstick cooking spray.

 

Preheat the oven to 425

Drain excess liquid from potatoes and mix all ingredients in a bowl.

Spray baking sheet.

Add latke mixture by 1/4 cup for each latke ; flatten.

Bake 15 min; turn latkes and bake 10 min longer.

Serve with applesauce or sour cream.
