Sugar Veil Icing

Here are the results of my first efforts with Sugar Veil Icing. I had quite a lot of problems before I achieved this end result.

The first batch I made would not set (it was raining heavily for days and the humidity plays havoc with this stuff).

I placed it in a very low oven to dry (as suggested in the instructions) but it then became very brittle and just broke up.

Then the next morning, it had gone all soft and sticky again.

However, I soldiered on and applied a second lot of the product to the mats.

I left it for 24 hours or so but it was still too sticky to remove from the mat. I had to go away for 3 days, so I just left it on the bench. When I returned home, voila! it had set and I could remove it easily.

I have to say I am so happy with the end result. It is so flexible and would be wonderful to use.

I would in future make it just before I needed to add it to the cake as I don't know how it is going to store in Australian humidity.
