Ingredients for cucumber kimchi

Cucumber kimchi step 2

 

Slice 3 or 4 spring onions, a small bunch of chives - garlic chives if you can get them, grate a carrot - I used my wonderful Japanese mandolin - , chop a small onion, crush two cloves of garlic and finely chop a 2cm piece of ginger root. You will also need 2 teaspoons of toasted sesame seeds, a tablespoon of cider vinegar, and most important of all, 2 tablespoons of Korean hot pepper powder. There's really no substitute for Korean hot pepper powder as it has the right level of flakiness - not fine powder - and it's not as hot as chilli or cayenne powder.
