Catalan cream tarts with courgette jam
There is a curious preserve used in Spanish baking called cabello de angel, made from the spaghetti squash and tasting a little of mild spiced pineapple and lemon. Tricky to get here, but grated and peeled courgettes make a pretty good imitation. Served here in small all-butter pastry cases with a simple cornflour and yolk custard and a caramelised sugar crust.
