Alton Brown's Stove Top Mac & Cheese

Milan posted about this recently, and I thought I'd give it a whirl. Too bad I ran out of cheddar cheese and had to supplement it with some nacho cheese, hand-shredded Colby, and way too much mozzarella. The mozz made it more stringy and gave it a slightly odd taste; certainly tolerable, but made much better under a red sauce or chili.
