Pie Tee or Pai Tee (Top Hats)

These Pai Tee cases were extremely difficult to make, what a big challenge! You can use all sorts of fillings but here I opted to use fresh sengkuang (jicama or also known as yam bean) and carrot juliennes, and poached french bean. No seasoning added to the fillings but still not too bad (in my humble opinion), as the jicama tastes sweet itself...

Note on styling: The jicama and carrot juliennes, and the french beans were deliberately cut at different lengths to give dimensionality and makes the pai tees look more interesting....
