Engifer Smákokur (Icelandic Ginger Cookies)

1 cup butter (or ½ butter and ½ shortening)

1 ½ cups sugar

1 beaten egg

2 tbsp molasses

1 ½ cups flour

2 tsp baking soda

2 tsp cinnamon

1 tsp ginger

1 tsp ground cardamom seeds

¾ tsp cloves


Traditionally, these cookies were thin and crisp and were used to make wishes come true. It was thought that if you placed a cookie in the palm of your hand and snapped it with gentle pressure from the heel of your other hand, you would know that your wish would come true if the cookie broke into no more than three pieces.


1. Cream the butter and sugar together until light and fluffy. Mix in the beaten egg and molasses.

2. Combine the remaining dry ingredients. Add to the butter mixture and blend together.

3. Form into rolls and refrigerate until the dough is chilled through. ( at least 2 hours.).

4. Slice thinly and bake at 375’ F about 10 min. ( Be careful as the cookies bake quickly and can burn easily). If you prefer the dough can be rolled out and cut into shapes.


These cookies more than double in size when baked. They are easier to remove from the pan if you use parchment paper.
