Salt Pork

I've always wanted to try out salt pork: you're always reading about it in Faulkner novels and other Southern lit.

 

I have to tell you, as the name implies, it's salty. Way salty. Fried, it tastes like pork-rinds. It'd be good in green beans, but by itself, it's terrible.
