At the turn of the century (19th), several "Bouillons" opened in Paris. They were restaurants that served a cheap but good food to workers that could not go back home at noon. Few remain now. Bouillon Chartier, in the Montmartre district is one of them, Bouillon Racine another one. They serve good traditional food in a décor from the beginning on the 20th century. It is now a "fashionable" place but remains authentic.
