Homemade Jumbo Blueberry Muffins

Patrick wanted me to make him blueberry muffins. So I picked up a new jumbo sized pan and made him some. These came out so moist.


The key to making moist muffins is to not over mix the batter. Make sure there are lumps in the batter. The lumps will dissolve when it bakes, creating moist little pockets! Yum!


*Update* Patrick ate 5 muffins in two days! Now he's making me bake 12 more!
