Recipe: Banana Spread
When your bananas have gone over-ripe, turning brown/black and mushy, make this banana spread.

Fork-mash 2 bananas, with 1 tsp cinnamon, 2 TBSP lemon juice, 1 tsp grated lemon rind. Bring to a boil; reduce heat to just low enough that steam puffs gently from the mash. Cook for 15 minutes, or until most moisture has evaporated.

Allow to cool. Spread on bagel!
