raspberry-topped cupcakes

    i made these for a 3 year old friend. i finally got to a fudge frosting that i like! the raspberry is for color, cause i was displaying them on a vintage, red, wood cake stand. Fudge frosting recipe elaborated at chockylit.blogspot.com

      sure! it's pretty fudgy. not my dream fudge frosting yet... but i press on.

      4 oz bittersweet chocolate
      2 oz unsweetened chocolate
      10 oz semisweet chocolate
      2 sticks butter
      5 cups powdered sugar
      pinch salt
      2 tsp vanilla
      1 cup whole milk

      melt chocolates and butter over double boiler. stir until smooth. set aside to cool slightly. sift powdered sugar and salt. combine milk and vanilla. add milk/vanilla mixture to sugar/salt mixture. whisk until incorporated. add melted chocolate/butter mixture. stir until smooth.

      i usually chill it in the fridge for 20 minutes or so, whatever it takes to get it thick enough to frost. frost the cupcakes once the frosting thick enough, but i find that the frosted cupcakes taste best hours later or the next day, after the frosting has had some time to 'set'.

      These cupcakes look adorable..the raspberries are definitely a nice touch. I'm SO glad I stumbled upon your photos..I've been looking for a really good fudgy frosting recipe..I'll have to give this one a try..Thanx!! =)

      wow!!! i think i will try yr fudge recipe this weekend..and nice photos.. did u get yourself a Nikon D70 SLR?
