Shanghai Salmon B.L.T.

Makes 4 Servings



1 can ( 14.75 oz.) Pink Salmon, drained and flaked

1/2 cup panko or dry breadcrumbs

6 green onions, chopped

1 egg

3 tablespoons soy sauce (I suggest the low sodium kind)

1 tablespoon lemon juice

2 teaspoons sesame oil

3 cloves garlic, minced, divided

2 tablespoons olive oil, divided

1/2 cup mayonnaise

1 tablespoon wasabi powder or paste

8 slices sesame seed bread, lightly toasted

1 large tomato, thinly sliced

8 slices bacon, halved and cooked until crisp

4 leaf lettuce leaves



Combine the first 7 ingredients and 2 cloves garlic. Shape into 4 patties, formed to fit the bread. Heat 1 tablespoon oil in a large skillet and cook patties until golden brown and heated through, 4-5 minutes per side. Whisk together the mayonnaise, wasabi powder, 1 tablespoon olive oil and 1 clove garlic. Spread mayonnaise on 1 side of each slice of bread. Top 4 slices bread with tomato, then a salmon patty, 2 pieces bacon, lettuce and remaining bread.
