Finishing Off Some Maple Syrup
Every Sunday afternoon I've been finishing off a batch of maple syrup from all the sap we collected that week. This year I've been finishing mine to a final temp of 219.5 F and it seems to be perfect. This is one degree above the recommended for our climate, but it produces a slightly thicker syrup but it doesn't crystallize. It's quite delicious and we've been eating pancakes every morning since I finished the first batch.
