Seasoned Carite (fish) Head and Tail

This is one of my favourite fishes to eat. It's called Carite in Trinidad (which seems to be a Spanish word, although we pronounce it CAH-REET). Some people love the head and tail of a fish, especially.


It is Cero Mackerel or Scomberomorus regalis and is found exclusively in the Western Atlantic Ocean and part of the Caribbean Sea.
