Fried Carite

Coated in cornmeal and flour, deep fried. Lovely with rice and dhal, or fried rice etc.


This is one of my favourite fishes to eat. It's called Carite in Trinidad (which seems to be a Spanish word, although we pronounce it CAH-REET). Some people love the head and tail of a fish, especially.


It is Cero Mackerel or Scomberomorus regalis and is found exclusively in the Western Atlantic Ocean and part of the Caribbean Sea.
