Mom's black cake texture

Occasionally, different celebrations coincide. Christmas and 'Id ul Adha were close by this year, a week apart. Mom generally makes halaal Trini black cake for 'Id, so here it is. The non-alcoholic black cake.


Black cake is a dense, dark, rich fruit cake, usually with the fruits soaked in alcohol and doused after baking in more of the same :-) Since we're Muslim, this one skips that special touch. But it's still really moist and good.


Minced to almost pureed fruits are necessary...or I won't eat it :-) And dark, really dark (hence "black") from the use of good browning (caramelised sugar that is dark dark brown).
