Baiganis for Ramadan!
In honour of Ramadan, as this is one of those delicacies found at a Trini iftar (breaking of the fast) in mosques. I used to hate these because I hated baigan, but I learned the error of my ways.
Sliced eggplant, dipped in a seasoned thick yellow split pea batter and deep fried. Serve with some spicy mango or tamarind chutney.
