roast turkey in a cast iron pan.


slather it in paprika and duke's mayo, flip it on its belly and repeat on the back.

30 minutes at 450 then repeat the mayo on the back with an additional sprinkle of salt. [sea salt]

turn it down to 350 until the internal temp hit 170.

then flip it on its back, repeat mayo on the breast and a sprinkling of salt and return to oven for 30 minutes to brown the breast.

rest 30 minutes.
