California Walnut Breakfast and Snack Cookies
1/2 c. butter
1 cup packed brown sugar
1/2 tsp vanilla
1 - 14 oz can crushed pineapple, well-drained
1 3/4 c. flour
1/2 c. instant nonfat powder
1 tsp baking soda
2 tsp gr. cinnamon
1/4 tsp salt
1 3/4 c. quick cooking oatmeal
1 c. dried fruit (I used apricots chopped)
1 c. walnuts or pecans
1/4 c. coconut
In large mixing bowl, cream butter and brown sugar until fluffy ; beat in vanilla. Stir in crushed pineapple.
In separate bowl, mix together the dry ingredients until well combined.
Add dry ingredients to the pineapple mixture and stir until well combined.
Drop by rounded spoonfuls onto parchment lined baking sheet.
Bake in 350 F. oven for 12-15 min.
yield: 36 cookies.
