Tour de Cantillon

This is the vessel into which the hot liquid from the brewing kettle is pumped, to cool overnight, allowing strains of resident wild yeast to infect the beer before the cool liquid is pumped into large, wooden barrels for fermentation and subsequent aging for a year or more.
