Homemade Tomato Sauce, May 26th 2011
This delicious healthy tomato sauce is super fun to make! I've made it in a zucchini pasta bake, but we usually have it tossed with coloured kamut rotini with a simple side salad.
4 cloves garlic, minced
1/2 onion, chopped *you can use more, I just don't like onion very much
1/2 c. coloured bell peppers, chopped
a handful of mushrooms, diced
1 tsp. dried oregano
1/4 tsp. basil
1/4 tsp. thyme
1/4 tsp. pepper
1 tsp. salt
2 Tbsp. olive oil
1 can crushed tomatoes
6-8 fresh tomatoes
In large pot, saute the garlic, onions, peppers, mushrooms & spices in oil on medium heat until onions are translucent. Add tomatoes. Cover with lid & simmer on medium-low 15-30 minutes, stirring occasional. If sauce is too thick, thin it with a bit of stock or water.
Remember pasta sauce gets tastier as it sits. It's a great make-ahead recipe. Or you can do like we do & have leftovers for lunch the next day.
The salad is spinach leaves tossed with sesame seeds, soy nuts & a dressing of grapeseed oil, balsamic vinaigrette, rosemary & a pinch of salt.
