    really excellent demonstration. i never knew you had to do all that. i assumed the roe just came out of the fish like that without preparation. the photo is lovely, too

    Bindifry, I think the roe can be eaten straight out of the fish, but it has a VERY fishy taste and spoils quickly. So salting improves the flavour and makes it last longer.

    I've never understood people who don't like it! It's delicious!!! In Russia we used to eat it on a slice of white bread (the best one is baguette) with butter. I can't imagine any celebration without it!
    I wish it was possible to find salmon roe in Cape Town! Life would be absolutely wonderful! (I wouldn't have to bring it from Russia)
