Pulutan (Davao City)
This is sinuglaw from the Visayan "sugba"/grilled and "kilaw"/raw. It is a mix of grilled pork and fresh tuna slices sprinkled with chopped siling labuyo and onion, garnished with cucumber slices, and marinated in vinegar. An ice cold San Miguel Beer will be a perfect match.
