Pineapple salsa & seared crocodile

I believe this cut is from somewhere near the tail. Crocodile meat is marinated in ground lemon myrtle, lime juice, oil & seasoning. Fully cooked crocodile is very hard. Therefore I try cooking it til leaving some pink in the meat, it's probably alright for this meat. *Fingers crossed*. Some seasoned black radish for tasting. Pineapple salsa is HOT! I think it will go w the crocodile. My mouth will be burning during dinner. Hubby will have caramelized pineapple for his portion. Mango salsa would be nice but not in season at the moment. 27 May 2011
