The 大盆鸡 Spicy Chicken with Handmade Noodle must be their signature dish. Almost every table ordered one. It is a fairly well-known Xinjiang dish. The platter arrived with chunks of tender chicken wing among floury potatoes, both of which had soaked up the spices of the stew! Red and green pepper strips added colour and texture, while the slivers of onion gave it a bit of freshness. All this was piled on top of handmade noodles which were slippery and silky. The best part about handmade noodles is that they are uneven. Thick and chewy in some parts, thin and soggy in others. Every so often the lady behind the partitions would pull a batch of noodle before boiling them up.
Despite the sauce looking red and fiery, it was rather mild. I put it down to the use of dried, mild red chillies which imparted a smoky paprika flavour to the oil.
An authentic looking Xianjiang restaurant, right down to the friendly Uighur-looking lady who is the chef, and probably the boss!
