Rapeseed oil, or canola oil is basic material of Sichuan foods. They care much about the quality of oil as olive oil in Italian foods. I have heard they prefer to use virgin rapeseed oil for better taste and nutrient (vitamine etc). Rapeseed oil is not so stable as olive oil, so rapeseed virgin oil must be freshly used. That also means they prefer to use locally produced oil, as fresh milk.
