White Bean Salad
A great accompaniment to grilled chicken or fish, Heather says, “This White Bean Salad can’t be beat for a poolside lunch!”
Combine 2 cans drained and rinsed white beans, 2 chopped tomatoes, 3 diced stalks of celery, 1 diced cucumber, 1 chopped red bell pepper, 1 bunch chopped flat leaf parsley, and either 1 bunch sliced chives or green onions. Add ½ bunch chopped dill, the juice of 1 lemon, a drizzle of olive oil, and a shake of sherry vinegar. Salt and pepper to taste.
