Lucanian risotto

5 cups vegetable or chicken broth

3 tbsp. olive oil

1 small onion, finely chopped

1 tbsp chopped rosemary

1/2 lb Italian sausage, uncased (sweet recommended, spicy better)

1/2 tsp red pepper flakes (optional, but not in my house)

2 cups arborio or carnaroli rice

1/2 cup dry white wine

4 oz. smoked scamorza (or smoked mozzarella), diced

1/2 cup grated pecorino (or Parmigiano)

 

Recipe not online, but this is close (translated from Italian) minus the sausage which should go in before the rice.
