Cacio e' pepe

My personal take on a classic Italian pasta dish. Added to the classic recipe I add a small finely sliced shallot and hot paprika, plus lots more pepper than is usually called for. Some people use parmigiano reggiano, but I prefer to use peccorino romano cheese as I like the flavour more. Yummy! Probably my favorite pasta dish!

    oh this is that dish.. this looks wonderful... I didnt make it like this.. We dont have romano cheese.

    Manu praba, thank you very much! This is the traditional version, but as I said experimenting and adapting the dish is always great! I constantly try different variations of all the dishes I have learned to cook, I love the variety!
