Cacio e' pepe

My personal take on a classic Italian pasta dish. Added to the classic recipe I add a small finely sliced shallot and hot paprika, plus lots more pepper than is usually called for. Some people use parmigiano reggiano, but I prefer to use peccorino romano cheese as I like the flavour more. Yummy! Probably my favorite pasta dish!
