I seasoned this fettuccine with pesto and parmesan.


Home made pasta


1lb bread flour (or if you can find it, use Tipo ‘00’ flour, farina di grano tenero)

5 large free-range or organic eggs or 10 yolks

1 Tbsp olive oil

1 tsp salt


Pour ingredients in a food processor. Process until the flour looks like breadcrumbs, then pour the mixture on to your work surface and bring the dough together into one lump, using your hands. You may add very little water if the dough is not humid enough. Once you’ve made your dough you knead and work it with your hands to develop the gluten in the flour, otherwise the pasta will be soft when you cook it, instead of "al dente". You can roll it out and cut it into shapes or make "Fettuccine" (which is what we made) or thin strips of pasta. You will need to let it dry before you cook it. Cook it in a LARGE pot of salted water, just a few minutes, until al dente. Season with your favorite sauce. Buon Appetito!!! :)
