Scrambled Polenta

I've been making polenta from scratch lately, and one of my favourite things to do is make a scramble with it.

 

Canned tomatoes and mushrooms make a great flavor. I just manually mangle the mushrooms versus slicing them, I like the texture more. Sautee the veggies first, because the polenta is physically delicate.

 

Seasoning is turmeric and Sriracha sauce.
