Salmon, sprout and shroom patties

I paid rent last week so I'm completely broke. I surveyed my cupboards and fridge and found:

 

16 oz canned Salmon

Italian-style bread crumbs

Vegetable oil

Bean sprouts

Mushrooms

Eggs

Spices

 

I dumped the contents of the salmon into a mixing bowl, followed by two eggs. Mixed in the bread crumbs and stirred the whole mess together. Add enough bread crumbs so the mixture isn't too watery or too dry -- enough so that when you form it into a patty it holds its shape. Chopped a handful of mushrooms and bean sprouts and mixed that into the salmon mix.

 

Form the mixture into patties and fry in about 1/4 inch of hot oil in a pan. Cook about three minutes, then flip it to fry the other side. Be careful about splashing the oil!

 

Drain on paper towels and serve with rice, cooked vegetable, or a salad. I season it with some soy sauce (the real fermented stuff, not La Choy salt water seasoned with caramel color). It was very good, and I could pretend it was almost good for me since it has veggies in it.

 

Suggested variations: Add different kinds of chopped veggies to the patty mix: spinach, red pepper, etc. would be good in this.
