Boudin Cajun sausage stuffed with dirty rice
Pronounced “BOO-dan,” boudin sausage is a savory combination of pork, cooked rice and seasonings stuffed into a sausage casing. A staple of Cajun cooking (boudin stands are ubiquitous throughout Louisiana), boudin is generally served boiled or steamed.
Even eating boudin is an experience: simply bite off one end and squeeze bite-fuls of the mixture into your mouth at will. The casing can be either eaten or discarded, depending on your tastes.
