Thanksgiving salad that surprised even me ...
Curly endive, or frisée
Boston lettuces
red radicchio
mandarin oranges
tart apples
pears
dried cranberries
candied pecans
cashews
Cranberry Vinaigrette:
• 1/4 cup frozen cranberry juice concentrate, undiluted
• 1/4 cup white wine vinegar
• 2 teaspoons Dijon mustard
• 1/4 teaspoon salt
• Freshly ground pepper
• 1/2 cup vegetable oil
This was wonderfully well received by everyone ... I loved it!
