Watermelon Mint Raspberry Salad

From Williams-Sonoma Starters cookbook in the "Red" section (you gotta love a book that is categorized by colors!)

 

Watermelon Raspberry Mint Salad

 

4 cups (about 2 lbs) of seeded and cubed watermelon

1/3 c minced fresh mint

3 c fresh raspberries

1 Tbsp honey

2 tsp lime juice

 

Divide the watermelon cubes in a large bowl and sprinkle with minced mint. Top with raspberries and sprinkle with remaining mint. In a small bowl, mix honey and lime juice with a fork and drizzle over the melon and berries.

 

**We refrigerated ours for about 30 minutes and it was the perfect amount of time to marinate in the lime juice.

 

It was SO good - perfect for summer. All fresh fruits and herbs from the local market - the lime juice was the only thing not from the 100 Mile radius, a bottled commercial brand. I am sure fresh lime juice would have been even better, but I did not see any limes at my market.
