Itanoni - Tortillas
The staff at Itanoni made tortillas from 5 difrerent varieties of corn.
The tortillas are pressed and cooked immediately on a clay comal over a fire.
Each table got plates of the five different tortillas and we all smelled, tasted and tested the texture of each of them. Rick led a discussion of each the attributes of the differnent kinds of corn in the tortillas.
